Die Idee diese scharfe Chili-W\u00fcrz-Sauce selbst zu machen war schon lange da, doch gut Ding will Weile haben.\u00a0 \u00a0 Karina\u00b4s zu Hause wurde somit in eine Chili-Tasting-Testzone verwandelt, in der sie, Freunde und Familie sich durch die verschiedenen R\u00fchlemann\u00b4s Chilis probierten.<br \/>Oft gab es rote Gesichter, laufende Nasen und auch weitere typische Chili-war-zu-scharf Nebenwirkungen. Mit einer Wassersalzmischung bestehend aus 500ml Wasser + 15g Salz, wandert alles in ein B\u00fcgelglas und wird gut gesch\u00fcttelt.<br \/>Karina hat ihren Sriracha-Ansatz mit nach Hause genommen und brav zwei Wochen gewartet.\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 Es ist wichtig zwischendurch den Deckel kurz zu \u00f6ffnen, damit das gebildete Gas entweichen kann. Achtung! Riecht sehr streng \u2013 das kommt vom Fermentieren.<br \/>Nach den zwei Wochen wird die Fl\u00fcssigkeit\/Salzlake von Chili und Knoblauch abgegossen und aufgefangen. Nun nimmt man drei Essl\u00f6ffel Salzlake, Chili und den Knoblauch und p\u00fcriert alles gut. Das Ganze noch einmal durch ein Sieb geben und fertig ist eine leckere, relativ milde Sriracha.<br \/>In Thailand wird die Salzlake \u00fcbrigens oft zum W\u00fcrzen verschiedener Speisen mit auf den Tisch gestellt, ein Versuch ist es sicher wert.<br \/>Wer es noch milder mag, kann einen Teil der Chilis durch Paprika ersetzen oder Zucker dazu f\u00fcgen (in dem Fall auch etwas Essig, sonst startet die Fermentation neu).
