Der kr\u00f6nende Abschluss ist eine sahnig \u2013 k\u00f6stliche Lavendelcreme.<\/p><p>Zutaten f\u00fcr die Knusperstreifen:<\/p><p>500 g H\u00e4hnchenbrustfilet (in Streifen schneiden)<br \/>100 g PaniermehlMayo<br \/>etwas Mehl<br \/>Salz und Pfeffer<br \/>viele Kr\u00e4uter (hier Lavendel und Thymian)<\/p><p>Die kleingeschnittenen oder getrockneten Kr\u00e4uter kommen in die Mayo. Die Streifen werden erst in Mehl, danach in der Mayo und zum Finale im Paniermehl gew\u00e4lzt. Danach werden sie sch\u00f6n hei\u00df angebraten.<br \/>Reis wird wie ben\u00f6tigt gekocht und dem Kochwasser viel Lemongras, welches geschnitten und gequetscht wurde, hinzugef\u00fcgt. TK Mango<br \/>60 g Apfelessig<br \/>60 g Wei\u00dfweinessig<br \/>20 g Wasser<br \/>250 g Rohrzucker<\/p><p>Erst die Gew\u00fcrze, Chili und Zwiebel (kleingehackt) mit dem Wasser und Zucker ca. 5 Minuten erhitzen. Nun die restlichen Zutaten hinzuf\u00fcgen und f\u00fcr ca. 45 Minuten garen und dabei immer wieder flei\u00dfig r\u00fchren. Die Bl\u00e4tter vom Schnittknoblauch entfernen. Hidcote Blue)<br \/>4 Blatt Gelatine<br \/>50 g Honig (evtl. Lavendelhonig)<br \/>1 TL Zitronenschale oder Aroma<br \/>150 g Sahne<\/p><p>Milch und Lavendel erhitzen, nicht kochen. Danach min. 30 Minuten ziehen lassen. Eigelb, Honig und Zitrone unter st\u00e4ndigem R\u00fchren bei ca. 50 Grad aufschlagen und langsam die Lavendelmilch unterr\u00fchren. Die eingeweichte Gelatine dazugeben und im K\u00fchlschrank gelieren lassen. Das Eiwei\u00df zu Schnee und die Sahne steif schlagen. Beides \u00fcber die Creme geben.
